Ingredients Directions
  • 1 package Nueva Cocina™ Taco Fresco Beef Seasoning Mix
  • 1-1.25 lb. ground turkey (ground chicken, beef, Tofu  or other meat substitute)
  • 1 eight-ounce can tomato sauce
  • Romaine lettuce (4 – 6 leaves)
  • Toppings:  1 tomato, diced, Grated Low-Fat Cheese


 
  1. Prepare ground turkey according to Nueva Cocina seasoning packet directions. 
  2. Separate Romaine leaves.  Wash and pat dry.
  3. Fill with the prepared Nueva Cocina Taco Fresco mixture, top with diced tomato, cheese and your choice of toppings.

  • 1 package Nueva Cocina™ Picadillo Seasoning mix
  • 1 lb. lean ground turkey (ground chicken, ground beef, Tofu or other meat substitute)
  • 1 eight-ounce can tomato sauce
  •  3 fresh acorn squashes or other small variety squash


 
  1. Slice the squash in half, cover with foil and bake in 325 degree oven until tender. (Time varies depending on type and size of squash).
  2. Prepare ground turkey according to Nueva Cocina seasoning packet directions.  Remove from heat.
  3. Scoop ground turkey or beef to fill the center of the squash.

  • 1 package Nueva Cocina™ Picadillo Seasoning Mix
  • 1-1.25 lb. ground turkey (ground chicken, lean ground beef, tofu or other meat substitute may be substituted for the ground turkey)
  • 1 eight-ounce can tomato sauce
  • 1 can water chestnuts (6 oz.) sliced
  • 1 cup sliced black or shitake mushrooms
  • 1 small red bell pepper julienne
  • ½ cup sliced green onions
  • 1 head lettuce, iceberg, Romaine or other           
  • 1 package crispy rice noodles
 
  1. Prepare ground turkey according to Nueva Cocina seasoning packet directions.  Remove from heat.
  2. Add sliced water chestnuts, sliced mushrooms, and red bell pepper. Cook for one minute.    Remove from heat.
  3. Wash lettuce. Separate leaves. Pat dry.
  4. Place a small amount of rice noodles in each lettuce leaf, follow with a scoop of cooked turkey Picadillo mixture.

Garnish with bits of sliced mushroom, julienne pepper strips and sliced green onion.

  • 1 Package Nueva Cocina Picadillo Seasoning Mix
  • 1-1.2 lbs Lean Ground Beef
  • ½ Cup Unseasoned Bread Crumbs
  • 1 Egg
  • 1 can (8 0z) tomato sauce
 
  1. Preheat oven to 350˚
  2. In a mixing bowl, combine the seasoning and meat
  3. Add remaining ingredients and mix thoroughly
Place in a loaf baking pan and bake for 1 hour 15 minutes. Meat is ready when center is 160˚ and no pink color is visible in the middle of the loaf.

  1. Prepare Nueva Cocina ™ Black Bean Soup as directed on package.
  2. Cool soup to room temperature.

When cool, puree soup to smooth consistency.

Garnish with diced red and green pepper
Serve with chips (plantain, pita, tortilla, etc.) or crudités.

Ingredients   Directions
  • 1 package Nueva Cocina™ Cuban Black Bean Soup
  • 3 Cups water
  • 2 Tablespoons Olive Oil

 
  1. In a medium saucepan with a lid, combine water, olive oil and the package of Nueva Cocina Cuban Black Bean Soup. Mix well.  Bring to a boil on high heat.
  2. Cover and let boil for one minute, then reduce heat to low.
  3. Simmer covered for 30 minutes, or until the beans are tender, stirring occasionally. If the soup becomes too thick and the beans are still not tender, add water, ¼ cup at a time and continue cooking until beans are tender.

Ladle into serving bowls and garnish with low-fat sour cream, shredded cheese, red or green pepper strips and cilantro.

  • 1 grilled or broiled chicken breast, sliced into strips
  • 1 Avocado, diced
  • Grated Queso Blanco cheese, for garnish
 
  1. Prepare Nueva Cocina® Tortilla Soup according to package directions.
  2. When the soup is ready, ladle soup into bowls, arrange chicken breast slices on top, garnish with tortilla strips or chips, grated Queso Blanco and diced avocado.

Fast and Easy Empanadas
Ingredients   Directions
  • 1 pk. Nueva Cocina™ Picadillo Beef Seasoning Mix
  • 1 lb. lean ground beef, ground turkey or meat substitute
  • 1 8 oz. can tomato sauce
  • Your favorite pie crust dough

    For Filling:

    Brown beef or turkey over medium heat. Blend in Nueva Cocina Picadillo Beef Seasoning Mix and cook 1 minute. Stir in tomato sauce. Cover and simmer 10 min. Stir occasionally. Set aside.

For Pastry Dough:
Use your favorite premade pastry dough, or one batch of favorite pastry recipe. With cookie cutter or bottom of a glass, cut pastry into 3” – 5” circles. Fill each circle with 3-4 tsps. of filling. Fold circle into crescent, pinching edges together to seal. Prick lightly with fork. Brush with light coating of egg white.Bake at 375 degrees 25-30 min., until golden.

If using extra lean beef or turkey add 1 Tbl. spoon {Spanish} olive oil to brown meat.

 

Jiffy Chipotle Chili  
Ingredients   Directions
  • 1 pk. Nueva Cocina™ Chipotle Taco Beef Seasoning Mix
  • 1 can tomato sauce (8 oz.)
  • 1 lb. Lean ground beef, ground turkey or meat substitute
  • 1 can red kidney beans (8 oz)
  Brown beef or turkey over medium heat. Blend in Nueva Cocina Chipotle Taco Beef Seasoning Mix and cook 1 minute. Stir in tomato sauce. Drain kidney beans and add. Cover and simmer for ten minutes more, stirring occasionally.
If using extra lean beef or turkey add 1 Tbl. spoon {Spanish} olive oil to brown meat.

“Dinner Party” Nachos
Ingredients   Directions
  • 1 pk Nueva Cocina™ Beef Seasoning Mix, any flavor
  • 1 8. can tomato sauce (8 oz.)
  • 1 lb. lean ground beef, or ground turkey or meat substitute
  • 1 pk (14 ounces) baked “fat-free” tortilla chips
  • 1 cup Colby Jack Cheese, (shredded)
  • 3 scallions, thinly sliced (optional)
 

Brown beef or substitute over medium hear. Blend in seasoning mix and cook 1 minute. Stir in tomato sauce. Simmer for 1 minute. Set aside. Line two large rimmed baking sheets with foil. Spread the tortilla chips over baking sheets. Top evenly with cooked seasoned beef. Sprinkle with cheese. Bake 5 – 6 minutes or until cheese has melted. Serve immediately. Garnish with sliced scallions.

Taco “Tapas” Topped with Mango 
Ingredients   Directions
  • 1 pk. Nueva Cocina™ Chipotle Taco Beef Seasoning Mix
  • 1 can tomato sauce (8 oz.)
 

1 lb. lean ground beef, ground turkey or meat substitute
Miniature Taco Shells
½ Mango diced
Brown beef or turkey or meat substitute over medium heat.
Blend in Nueva Cocina Chipotle Taco Beef Seasoning Mix and cook 1 minute. Stir in tomato sauce. Cover and simmer for ten minutes more, stirring occasionally. Fill miniature taco shells with beef mixture. Top with diced mango, and serve
If using extra lean beef or turkey add 1 Tbl. spoon olive oil to brown meat.
